		<description><![CDATA[Last Sunday&#039;s Sunday Star Times Sunday magazine had a recipe for Elaine&#039;s pickled artichokes.
Combine 1.5 litres white wine vinegar, 750 g sugar, 1 Tbsp tumeric, 2 tsps mustard seeds, 2 tsp celery or coriander seed (both are great says Elaine), a 2.5 cm knob of fresh ginger, grated and a cinnamon stick.  In a large saucepan bring to the boil, stirring until the sugar has dissolved then simmer for half an hour.  Set aside to cool.  
Meanwhile scrub and peel 500g of Jerusalem artichokes and pack whole into clean glass jars, along with 1 sliced onion per jar.  Top up with the pickling solution and seal with plastic lids.]]></description>
